Caper sauce, ready in a jiffy

Caper sauce is one of the easiest condiments to use. It does not require cooking, as only preserves or fresh foods are used. Other than the mixer, which is optional, you only need a sharp knife and a little perseverance to make it.

Though it is basic, caper sauce expresses a variety of scents. After all, it is made with capers, anchovies, parsley, and oil, all ingredients with a strong flavour.

Caper sauce also expresses a certain versatility. It can be used as an alternative to pâtés, perhaps to enrich canapés and toasted bread. It can even be used as a pasta sauce, almost like pesto sauce, although in this case it must be diluted with a little hot water. You can also use this sauce as a side dish with easier second dishes, like grilled fish.

Preparing the caper sauce is very easy; here is the step-by-step recipe:

  • Wash the capers under running water.
  • Chop the desalted capers.
  • Blend the parsley leaves.
  • Add the anchovy fillets and extra virgin olive oil.
  • After that, blend it again.
  • Place the caper sauce in a bowl and use it as you wish.

  • 4 fillets of Cetara anchovies in oil
  • 1 bunch of fresh parsley
  • 8-10 tablespoons of extra virgin olive oil

A focus on capers

The protagonist of this sauce is obviously capers, a recurring presence in many traditional recipes, especially in southern Italy. Capers are particularly useful as a key component in many recipes because of their versatility.

However, capers can also be used as a spice in dishes like pizza or fish-based dishes. Capers are distinguished by their natural flavour, which is further increased by the preservation process (salting). In this recipe, we suggest using capers in vinegar, which must be washed carefully.

Capers are valued for their nutritional qualities as well. They are abundant in mineral salts and vitamins, especially potassium and vitamin C, which are good for the immune system and blood pressure. Additionally, they contain a lot of antioxidants, which lower the chance of developing cancer and delay the ageing process of cells.d

The role of anchovies in caper sauce

Anchovies are an essential component of caper sauce as well. In fact, they frequently appear alongside capers in a variety of foods, including pizza, spaghetti, fish, and side dishes. The reason anchovies are so popular is that they have a nice, balanced flavour. They are also valued for their capacity to melt, which enhances the way they combine with the other ingredients.

For this recipe, I recommend using anchovies from Cetara, a town in the province of Salerno that stands out for its even more savoury flavour and for its ability to express umami hints, that is, acidic and sweetish at the same time.

Any form of anchovies offers a good amount of protein, phosphorous, and vitamin D. Like few other compounds in nature, vitamin D strengthens the immune system, and phosphorus improves cerebral abilities, particularly memory. Anchovies also contain omega-3 fatty acids, which are good for the heart, although they increase the caloric intake.

How to choose a good extra virgin olive oil.

The recipe for caper sauce is based on a handful of ingredients, so each has its own weight. The same goes for extra virgin olive oil, which not only acts as a support but also as an actual ingredient. For this reason, I recommend that you choose the product carefully. It is not easy to recognise an excellent extra virgin olive oil; generally, you should evaluate the appearance, the aroma, and the taste.

Regardless of the colour, which varies depending on the kind, the appearance must be brilliant. Any oil, no matter how little hazy, indicates poor quality.

The flavour and scent must then be reminiscent of raw olives. It is insufficient to simply place your nose next to the bottle in order to assess the aroma. A better method is to put a few drops in your palm and smell it.

How to flavour caper sauce?

You will have already guessed, caper sauce is a simple and very tasty sauce. This simplicity is also found in the choice of aromas and spices, which is truly minimal. Basically, we only find parsley. An audacious decision given that it is connected to fish goods rather than capers. Despite this, the mixture works well and ensures a certain level of seasoning depth.

Parsley, a bit like all spices, has functions close to natural medicine. It aids in the dissolution of kidney stones, increases appetite, and is a great digestive.

Don’t like parsley? Don’t worry; there are several alternatives. If you are aiming for a less pronounced aroma but want to enhance the bitter notes, use rocket leaves or escarole. If you are aiming for a more pronounced aroma, then replace the parsley with coriander, which is a similar spice with citrus and lemon notes.

Some variations of caper sauce

Caper sauce can be considered as a starting point. In the recipe, you can add various ingredients in order to create even more complex preparations. For example, it doesn’t take much to transform the sauce into a pesto; just add a little grated Parmesan or even just almonds or pine nuts. You should be generous with the oil in order to create a softer texture.

Similarly, caper sauce can be enriched with other ingredients that have a spice or aroma function. At least for those with more robust palates, garlic can be a clever answer. The same is true with chilli pepper, since a little of spice can add a lot to savoury flavours.
