
Yellow plum jam, an excellent recipe!

Preparing it won’t be difficult, and the result will literally win you over! And don’t call it plum marmelade! Marmelade is prepared with citrus fruits.

Preparation yellow plum jam
- Wash the plums, dry them, open them, and remove the seed.
- Place them in a saucepan with the sugar and lemon juice on the heat, and cook for 35–40 minutes.
- Stir continuously, and remove any foam that may form on the surface. As soon as everything is prepared, transfer the mixture into dried and sterilised glass jars.
- Cover them tightly with their lids, turn them upside down, and let them cool to room temperature.
- Store your plum jam in a cool, dry place, away from light.

- 500 gr. of coconut palm sugar (or cane sugar)

Ripe but not soft plums are the best choice since they need to have just the right consistency to work with without crumbling too much. A homogenous and vivid peel colour is essential, as it signifies optimal ripeness and freshness.
Additionally, it’s a good idea to check for any bruising, stains, or signs of degradation on the plums, as they could affect the jam’s safety and quality. The best plums are the sweeter and more aromatic ones, which offer a rich, natural flavour without needing a lot of extra sugar. Stanley plums are one of the more desirable varieties because of their low water content and sweetness.
Finally, I advise you to “smell the plums”: an intense aroma indicates good quality and ripeness, while a weak or absent odour could suggest fruits that are not sufficiently ripe.
